Shepherd’s Soup

One of my favorite ways to honor the seasons and holidays is through food! This Shepherd’s Pie inspired Soup is perfect for the- not- quite Spring season where we still crave hearty warming foods, and a little bright green spring peas. I love making meals that feel both nourishing and rooted in tradition. And its a perfect way to add something nourishing to your St. Patrick’s Day!

Shepherd’s Soup Recipe
Ingredients:

  • 1 lb ground lamb or beef

  • 1 onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 4 cups bone broth

  • 1 cup diced potatoes

  • 1 cup frozen peas

  • tomato paste (optional)

  • 1 tsp fresh thyme

  • Salt and pepper to taste

  • 1/2 cup heavy cream (optional)

Instructions:

  1. In a large pot, brown the ground meat over medium heat, seasoning well. Remove and set aside.

  2. In the same pot, sauté the onion, carrots, and celery until softened. Add garlic and cook for another minute.

  3. Stir in the tomato paste, thyme, salt, and pepper.

  4. Pour in the broth and add the potatoes. Bring to a simmer and cook until potatoes are tender.

  5. Return the meat to the pot, add the peas, and stir in the heavy cream if using. Let everything warm through.

  6. Serve hot with a slice of fresh sourdough with lots of good Irish butter!
